鲢鱼炖豆腐的做法步骤
1. 鲢鱼去鳞、去其内脏、鱼鳃和黑色腹膜，洗净，切大段，斜打花刀；
2. 起油锅，油热后，爆香葱姜蒜和八角；
3. 下入三勺郫县豆瓣酱炒出红油；
4. 烹入料酒，下入切好的鱼段；
5. 添加没过鱼的开水，大火煮开，转中火炖20分钟；
6. 添加大块卤水豆腐，继续中火炖20分钟；
7. 少量添加盐和味精，转小火炖20分钟；
8. 撒入香菜和葱碎，出锅即可。

甜面酱适量
1.鲢鱼切成段，五花肉切片。
2.葱姜蒜、花椒、辣椒准备好。
3.豆腐切块。
4.把五花肉炒出油。
5.加葱姜蒜、花椒、辣椒炒香。
6.加四川辣豆豉炒。
7.加一点儿甜面酱炒。
8.所有调料炒出香味。
9.加水、加盐。
10.水热后加鱼，盖盖，炖。
11.15分钟后，加焯过水的豆腐。
12.把鱼翻一下，加白胡椒粉，再炖5分钟。
千滚豆腐万滚鱼，多加水，多炖，更入味。
